Comments
At time of inspection, the following were observed:
- chemical spray bottles were stored above food on wire racks. Chemicals are to be stored below food items and single use containers to prevent contamination
- Chemical spray bottles were not labeled. Chemicals are to be labeled.
- Gasket on walk-in cooler is torn- must be replaced to ensure a proper seal
- TCS foods were not held at 41 degrees. Voluntarily discarded ham (48), cheese (50.9), onion (55), sausage (46.1). All TCS foods to be held at 41 or below.
-Reach in/prep line cooler not able to cold hold at 41 or below. Unit shall not be used until it is able to cold hold at 41 or below.
- TCS foods were not date marked- ensure that all TCS foods are properly date marked
-TCS foods with date marking were not disposed of by the 7th day. Ham dated 8/1, onions and peppers 8/21.
-Unwrapped salami sitting directly on shelf. Discarded. Food is to be in container or wrapper to prevent contamination.
-Hot water tank was leaking. Please repair to prevent contamination and ensure adequate hot water supply.
-Chlorine test strips were available but quat sanitizer was being used. Quat test strips are to be ordered.
