[?] A summary of the violations found during the inspection are listed below.

3717-1-03.4(E) / Cooling methods - temperature and time control.
Observed eggs being stored in a bucket of ice that was not being drained. TCS foods must be cooled using approved methods. If using ice to cool eggs, the ice must be able to drain away from them.

3717-1-04.5(A)(3) / Cleanliness of nonfood-contact surfaces of equipment.
Observed microwave that was unclean to sight and touch. Nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris. Clean microwave so that it does not build up with bacteria and residue.

3717-1-06.2(I)(3) / Lighting - intensity (50 FC)
Repeat Observed two out of three light bulbs burnt out in hood in kitchen. Light intensity must be at least fifty foot candles in areas where a food employee is working with food, utensils or equipment such as knives, slicers, grinders, or saws where employee safety is a factor. Replace light bulbs to provide property light intensity.

3717-1-06.1(I) / Light bulbs - protective shielding.
Observed no protective shielding on light in walk-in refrigerator. Light bulbs shall be shielded, coated, or otherwise shatter resistant in areas where there is exposed food. Place plastic cover over light in walk-in refrigerator.
