3717-1-04.4(N)(3) / Manual and mechanical warewashing equipment, chemical sanitization (quaternary ammonium) - temp., pH, concentration, and hardness
Critical Corrected During Inspection Quaternary ammonium sanitizing solution at incorrect concentration. Quaternary ammonium solution shall have a minimum concentration of 150 ppm. Solution was replaced with fresh solution during the inspection, which met minimum requirement. PIC called to have concentration of sanitizer increased during inspection.

3717-1-05.4(K) / Storing refuse, recyclables, and returnables.
Corrected During Inspection Observed several boxes and trash lying directly on the floor in the kitchen blocking the back door. Refuse shall be stored so they are accessible to insects and/or rodents and off of floor to provide cleanliness and safety. Refuse was moved to outdoor waste receptacle during inspection.

3717-1-06.4(F) / Drying mops.
Corrected During Inspection Observed a mop lying in the mop sink unable to properly dry. After use, mops shall be placed in a position that allows them to air-dry without soiling walls, equipment, or supplies. Ensure all mops are hung over mop sink or over bucket to air-dry.
