3717-1-04.4(A)(2) / Equipment components kept intact, tight, and adjusted
The hot dog roller/hold case's cover is broken and a gap leading into the machine is present. To prevent the temperature of the hot dogs from going below 135 degrees F, this cover should be replaced. The hot dogs were maintaining a temperature of 210 degrees F at the time of the inspection. The PIC was made aware.
