Observed level 2 food protection certificate for manager on duty- observed sanitizer (bleach) and chlorine test kit- observed thermometer in prep table and in cooler. Observed food thermometer- Discussed with operator how raw sausage is to e handled (received frozen, thawed in water, spread on pan run thru oven x2, then chopped and frozen, thawed in and put on pizza/subs and baked in oven.) Facility is clean. Observed date marking. |
