3717-1-03.4(G) / Ready-to-eat, time/temperature controlled for safety food - date marking.
Critical Corrected During Inspection Observed cheese sauce in walk in cooler with no date marking. Any item that is ready to eat opened, prepped, cooked, opened, or cut needs a date marking when the item should be discarded by.
To prevent foodborne illness, refrigerated, ready-to-eat, TCS food held at a temperature of 41°F or less for more than 24 hours shall be clearly marked at the time of preparation or the time the original container is opened to indicate the date or day, that is a maximum of seven days, by which the food shall be consumed, sold, or discarded. The day the food is prepared or opened is day one.
3717-1-05.1(O)(2) / Using a handwashing sink - other uses prohibited.
Critical Corrected During Inspection Observed food employee using hand sink to dip wiping cloth in for use of wiping off table. A hand washing sink may not be used for purposes other than handwashing.
To prevent contamination, a handwashing sink may not be used for purposes other than handwashing.

3717-1-04.4(B) / Cutting surfaces.
Observed cutting board area in meat cooler with dark scores. If cutting board can not be effectively cleaned they should be resurfaced or replaced.
Surfaces such as cutting blocks and boards that are subject to scratching and scoring shall be resurfaced if they can no longer be effectively cleaned and sanitized, or discarded if they are not capable of being resurfaced.
3717-1-06.4(A) / Repairing.
Observed ceiling in 2 spots where fresh dry wall has been put up with no paint yet. Observed light in walk in cooler that is out. Observed same light had water dripping from it indicating possible leak. observed faucet with constant flow in dishwasher room that could not be turned off. The physical facilities shall be maintained in good repair.

Observed mixer and slicer in facility not being used. The premise shall be free of unneccessary items and litter.

Facility has employee health policy, spill kit, serv safe level 2 certificates, pest control in place, thermometer and test strips available. observed hair nets and beard nets in use. Facility followed during inspection and corrected any violations found that they were able and were available to answer any questions. -Thank you!
