Comments
At time of inspection, the following violations were observed:
-PIC was unable to describe proper cooling procedure and was unable to describe proper rehearing procedure
-Some employees did not turn off water with a paper towel. Please review hand washing procedure with all employees.
-One container of milk was observed out of temperature at 55 degrees. Voluntarily discarded.
-Several containers of beef labeled 1/13. Discarded
-Observed debris build-up on underside of prep cooler lid. Please increase cleaning frequency to prevent build-up of debris.
-Please continue to wrap or otherwise protect ice wand food contact surface.
