3717-1-04.1(KK) / Food equipment - certification and classification.
Repeat Equipment is not approved by a recognized testing agency. Observed crock pots and microwave in snack bar area. Observed domestic freezers in banquet kitchen.
Food equipment that is acceptable for use in a FSO or RFE shall be approved by a recognized food equipment testing agency.
3717-1-04.4(A)(1) / Equipment - good repair and proper adjustment.
Equipment and/or components are not maintained in good working order.Internal air temp.of produce cooler in banquet kitchen was 48F. Must be able to hold TCS food at an internal temperature of 41 F or less.

Repeat Non-food contact surfaces of equipment are dirty. Observed ice/frost build up inside produce cooler and 2 freezers in banquet kitchen.

Cleaned equipment and utensils, laundered linens, or single-service and single-use articles are not properly stored. Observed clean silverware stored with food contact surfaces stored up in containers on produce cooler in banquet kitchen.
Cleaned equipment and utensils, laundered linens, single-service articles, and single-use articles shall be properly stored as described in this rule.
3717-1-06.4(A) / Repairing.
The physical facilities are not being maintained in good repair. Observed light in banquet kitchen near bakery table that came on flickering. Bulb may need replaced.
The physical facilities shall be maintained in good repair.
