3717-1-04.2(H)(2) / Temperature measuring devices - mechanical warewashing.
A temperature measuring device to test the temperature of the hot water sanitation was not available at time of inspection. A temperature testing device must be obtained to ensure the proper sanitation of food contact surfaces.
A temperature measuring device is essential to monitor mechanical ware washing to ensure sanitization.
3717-1-04.4(A)(2) / Equipment components kept intact, tight, and adjusted
Observed lids on prep coolers near grill line with broken seals and broken hinges. Equipment shall be maintained in good repair and proper adjustment to ensure it functions as designed.
Equipment components such as doors, seals, hinges, fasteners, and kick plates shall be kept intact, tight, and adjusted in accordance with manufacturer's specifications.
3717-1-06.4(B) / Cleaning - frequency and restrictions.
Observed accumulation of food debris and residue throughout the facility. Cooler handles, floors between equipment, and walk in cooler floors shall be cleaned as often as necessary to prevent build up of residue.
The physical facilities shall be cleaned as often as necessary to keep them clean, and cleaning shall be done during periods when the least amount of food is exposed.

Gloves and thermometers available. Observed proper holding temperatures. One freezer unit is down-no food currently stored there. Work order has been placed to repair it. Observed proper date marking. Tiles in the grill area need to be re-grouted to prevent accumulation of food debris between tiles and to make the area easily cleanable, manager states that they are currently working on that- part of the floor is already grouted.
