3717-1-04.5(A)(3) / Cleanliness of nonfood-contact surfaces of equipment.
Non-food contact surfaces of equipment are dirty. Shelves or coolers, sides and doors of equipment accumulating food debris. Floors of walk in freezer accumulating food debris. Clean these areasmore frequently to prevent the build up of food debris.
Nonfood-contact surfaces of equipment shall be kept clean.
3717-1-04.5(D) / Nonfood-contact surfaces - cleaning frequency.
Observed accumulation of soil residue on nonfood-contact surfaces. Hoods and area around fryers accumulating grease and food build up. Clean hoods more frequently to remove grease anf prevent build up.
Nonfood-contact surfaces of equipment shall be cleaned at a frequency necessary to preclude accumulation of soil residues.
