Observed a knife held between two prep tables. Food contact surfaces must be cleaned once every 4 hours to prevent bacterial build up. As the tables are not pulled apart and cleaned often and do not allow easy visibilty for cleanliness store the knives in a designated location (mag-strip) where they can be easily seen and kept clean.
Cleaned equipment and utensils, laundered linens, single-service articles, and single-use articles shall be properly stored as described in this rule.

Observed a sink with damaged handles. Sink did provide necessary water. Maintain plumbing system and sinks in good repair.
