3717-1-03.4(F)(1)(a) / Time/temperature controlled for safety food - hot holding.
Critical Corrected During Inspection Pork cuts and pork ribs were being held below 135 degrees Fahrenheit. Person In Charge moved these items to be brought up to temperature during inspection.

3717-1-03.5(C)(3) / Food labels - bulk food
Donuts at self-service station had allergen information, but there was no indication that other labelling information was being kept in a nearby binder. Person In Charge told me they would make a label indicating the presence of the binder.

3717-1-04.4(A)(2) / Equipment components kept intact, tight, and adjusted
Door gaskets for freezers containing velvet ice cream and coolers containing milk and Monster products were damaged and need to be repaired or replaced. Ensure all door gaskets are maintained intact to create appropriate seal between door and cooling unit.

3717-1-04.5(A)(3) / Cleanliness of nonfood-contact surfaces of equipment.
Dippin' dots freezer had excessive frost accumulation, and a non-food contact surface of can opener had food debris on it. Ensure all non-food contact surfaces of equipment are maintained clean to sight and touch, free of accumulated soils such as frost or food.

Discussed violations with Person In Charge. Make sure to monitor foods being held hot, and to clean the capuccino machine regularly.
Complaint: Complainant claims that several items that he bought at the facility were spoiled or curdled, and that the facility was selling items past their "best by" date.
Response: I checked temperatures in all cold holding units and didn't find anything significantly out of temperature. The Person In Charge showed me that all cold holding units in the store have a sensor that alerts the Person In Charge if any of the units are out of temperature for longer than a half hour. The items I checked were not past their "best by" date.
