[?] A summary of the violations found during the inspection are listed below.

3717-1-05.1(O)(2) / Using a handwashing sink - other uses prohibited.
Critical Observed that the facility was using its hand sink to rinse coffee pots. Use hand washing sinks for hand washing only to prevent spreading bacteria.

3717-1-03.2(C) / Packaged and unpackaged food - preventing contamination by separation, packaging, and segregation
Critical Corrected During Inspection Observed packaged cottage ham underneath raw meats. During the inspection the PIC swapped the bacon and cottage ham to prevent any ready to eat items from being held under a raw item.

3717-1-03.4(F)(1)(a) / Time/temperature controlled for safety food - hot holding.
Critical Observed stuffed peppers at the facility holding 125F. During the inspection these items were discarded by the PIC. All hot foods shall hold at least 135F after cooking to prevent bacterial growth.

3717-1-03.4(G) / Ready-to-eat, time/temperature controlled for safety food - date marking.
Critical Corrected During Inspection Observed some cheeses that had exceeded their date marking. The PIC discarded these items at the time of inspection. All ready to eat foods requiring refrigeration shall be properly dated and discarded after 7 days.

3717-1-07.1(A) / Poisonous or toxic materials: Storage: separation.
Critical Corrected During Inspection Observed containers of degreaser on the counter in the food prep area. The PIC properly placed this chemical in their designated location at the time of inspection. DO NOT STORE CLEANERS OR CHEMICALS WHERE THEY MAY CAUSE CONTAMINATION TO FOOD OR FOOD CONTACT SURFACES.

3717-1-03.5(C)(2)(e) / Food labels - label information
Critical Observed various containers of bulk candies repackaged by the facility lack any ingredients including possible allergens. All allergens must be declared on bulk, repackaged foods.

3717-1-03.5(B) / Honestly presented.
Observed that the store label was placed over top of the label/ingredients on prepackaged cottage hams. DO NOT COVER THE MANUFACTURER LABELS WITH IN STORE LABELS.

3717-1-03.5(C)(1) / Food labels - packaged food
Observed packaged brussel sprouts and green beans that were not properly labeled. All packaged foods shall be properly labeled with: name, statement of responsibility, net weight, and ingredients if necessary.

3717-1-03.2(Q) / Food storage - preventing contamination from the premises.
Observed boxed foods on the floor of the walk in freezer. Store foods at least 6 inches off of the floor to prevent any contamination from splashing or spilling.

3717-1-04.4(A)(2) / Equipment components kept intact, tight, and adjusted
Observed that the hot holding unit was holding an ambient air temperature of 120 F at the time of inspection. The cooler was set to 177 F. Maintain equipment so that hot held foods hold 135F or higher to prevent bacterial growth. Observed that the walk in freezer had some ice build up. Maintain freezer condenser in good repair to prevent any ice build up which may damage foods.

3717-1-04.4(A)(3) / Equipment - cutting or piercing parts of can opener not maintained.
Observed metal shavings behind the blade of the can opener. Clean thoroughly and often to prevent metal shaving build up.

3717-1-04.5(A)(3) / Cleanliness of nonfood-contact surfaces of equipment.
Repeat Observed crumbs and debris all over the shelves of the kitchen and bottom of the reach in freezer. Clean shelves thoroughly and often to prevent debris build up. Observed dead bugs and dust underneath the grocery dry store shelves. Clean often to prevent this build up.

3717-1-05.4(L) / Areas, enclosures, and receptacles - good repair.
Observed a small hole rusted into the dumpster causing some leakage. Contact the dumpster company to have the dumpster repaired or replaced.

3717-1-06.4(A) / Repairing.
Observed counter top under the soda machine was damaged and held with duct tape. Repair the counter top to prevent further damage and allow easy cleaning.
