[?] A summary of the violations found during the inspection are listed below.

3717-1-04.2(I) / Sanitizing solutions - testing devices.
Observed that the facility had sanitizer rags left on tables through the facility. Sanitizer rags shall be held in sanitizer between uses to prevent contamination.
To ensure proper sanitization, a test kit or other device that accurately measures the concentration in PPM (mg/L) of sanitizing solutions shall be provided.

Comments
At the time of inspection there was only 2 slices of cheese out in the frozen containers. The cheese was holding 40 F during the inspection. Maintain cheese at temperatures of 41 F or below to prevent temperature abuse. loading less cheese in the frozen containers may help to maintain proper temperature. Per one of the employees the cheese are day dotted for 4 hours. If possible keep 2 pairs of the cold holding containers that way any foods can be easily moved to a new cold container if the ice pack begins to melt. If the facility is using the 4 hour rule any leftover cheese which is left out shall be discarded at the end of that 4 hour period.

All critical violations listed on prior reports have been corrected. Facility shall continue to follow proper food safety practices as they related to the cheese on the line.
