3717-1-03.4(C) / Thawing - temperature and time control.
Observed hot dogs thawing in room temperature. Thawing is to be done under cold running water, refridgeration, or during the cooking process.
TCS food shall be thawed as required in this rule.
3717-1-04.2(I) / Sanitizing solutions - testing devices.
No test strips available. Obtain quaternary ammonia (QT) test strips to ensure proper sanitizing of equipment and utensils.
To ensure proper sanitization, a test kit or other device that accurately measures the concentration in PPM (mg/L) of sanitizing solutions shall be provided.
3717-1-06.4(A) / Repairing.
Shelf under prep sink observed warped due to water damage. Repair damaged surfaces.
The physical facilities shall be maintained in good repair.
