Critical Food equipment surfaces are not cleaned at the required frequency. Observed a build up of ehat appears to be mold on drink nozzles. clean this area more frequently to prevent growth of microorganisms.
Equipment food-contact surfaces and utensils shall be cleaned at a frequency specified in this rule.
3717-1-06.1(C) / Floor and wall junctures - coved, and enclosed or sealed.
The floor and wall junctures are not properly coved or closed,. Observed coving missing/broken in walk in cooler. Repair/replace missing tiles.
In FSO's or RFE's in which cleaning methods other than water flushing are used for cleaning floors, the floor and wall junctures shall be coved and closed to no larger than one thirty-second inch; where water flush cleaning methods are used, shall be provided with drains and be graded to drain, and the floor and wall junctures shall be coved and sealed.
3717-1-06.4(B) / Cleaning - frequency and restrictions.
Observed a build-up of dirt and debris. Wall by sink under service counter accumulating splash debris. Clean more frequently to prevent build up.
The physical facilities shall be cleaned as often as necessary to keep them clean, and cleaning shall be done during periods when the least amount of food is exposed.

|Received complaint concerning gum in burger/cardboard container. Manager reported they do not allow gum chewing in the kitchen. Reminded facility/manager about proper hygenic practices in the FSO. No gum chewing is permitted while handling food/food contact surfaces.|
Overall facility clean and organized. Observed time and temperature controlled for safety items in proper temperature ranges. Gloves and hair restrains in use. Observed employee hand washing. Test strips and thermometers available. Thank you for your cooperation during the inspection.
