3717-1-02.4(C)(7) / PIC: duties - ensure employees are properly cooking TCS foods.
Critical Person in charge did not ensure employees are properly cooking TCS foods and/or using thermometers as required. PIC states frozen mozzarella sticks, pizza, and pre-cooked chicken cooked in oven are not checked for proper internal cooking temp of 135*F prior to serving. Ensure proper cooking temps are observed.

3717-1-06.2(B) / Handwashing cleanser - availability.
Corrected During Inspection No soap at handwashing sink(s). Observed no soap at hand washing sink in back storage area. PIC refilled soap dispenser at time of inspection.

3717-1-05.1(C)(1) / Handwashing sink - required water temperature
Handwashing sink water below 100°F. Observed temperature handwashing sinks behind service counter at 87*F & 83*F, Men's restroom 94*F, Women's restroom 88*F. Handwashing sinks shall be at 100* F to ensure effective hand washing. Correct by 6-7-22.

Corrected During Inspection Utensils and equipment contacting non-TCS foods not cleaned at required frequency. Observed visible black residue along ice chute inside bulk ice machine. PIC asked employee to begin cleaning.

3717-1-04.5(C) / Cooking and baking equipment - cleaning frequency
Cooking and/or baking equipment not cleaned when required. Observed microwave in satellite area to have dried food residue along the top of the inside and in plastic shield inside microwave. Clean by 6-7-22.

Working food containers not properly labeled. Observed spray bottle of water, butter topping, and salt shaker not labeled with container contents. PIC states he will make labels to place on containers today. Correct by today.

Repeat Food employee(s) not wearing a hair restraint. Observed food employees to not have hair fully restrained. Ensure all head and facial hair is effectively/fully restrained amongst food employees. Correct by next standard inspection.

Non-durable equipment observed. Observed finish along edges of candy drawers behind service counter to be separated/peeling up. Ensure equipment is smooth and easily cleanable. Repair/replace by next standard inspection.
