Critical Repeat Corrected During Inspection Handwashing sink is being used for purposes other than handwashing. Observed a pair of scissors and two knives in the bottom of the front hand washing sink. PIC removed knives and scissors at the time of inspection.

Repeat No towels or drying device at the handwashing sink(s) in the mens restroom.

3717-1-03.2(C) / Packaged and unpackaged food - preventing contamination by separation, packaging, and segregation
Critical Corrected During Inspection Food not properly protected from contamination by separation, packaging, and segregation. Bread on cooling rack did not have a top cover to protect from potential contamination. PIC placed bread in holding cabinet at the time of inspection.

Critical Repeat Corrected During Inspection Quaternary ammonium sanitizing solution at incorrect temperature, concentration, and/or water hardness. Container of sanitizer solution by the front hand washing sink at 100 ppm. PIC refilled solution to a concentration of 200 ppm at the time of inspection.

Critical Corrected During Inspection TCS foods not being cold held at the proper temperature. Steak boats prepared that morning at 46*F in the sandwich make line cooler. PIC placed steak in walk-in cooler to cool to 41*F or below. Discussed placing recently prepared products in walk-in to cool to 41*F or below before placing in make table.

Critical Corrected During Inspection TCS foods not being cold held at the proper temperature. Observed containers of steak and a bag of meatballs setting on the prep table that were not actively being prepared. PIC placed steak and meatballs into walk-in cooler at the time of inspection. Discussed bringing small amounts of product out at a time to prepare and for short periods of time to ensure cold holding of products at 41*F or below.

Critical Repeat Corrected During Inspection Improper storage of poisonous or toxic materials. Observed a spray bottle of cleaner hanging on the shelf above the prep table. PIC moved cleaner to chemical storage at the time of inspection.

Improper storage of food items. Observed a bucket of pickles on the floor by the prep sink. Food items shall be stored a minimum of six inches above the floor.

No sanitizer test kit available for automatic dishwasher. Discussed contacting service company (SSDC) to obtain proper test kit. Correct by next inspection.

Non-food contact surface(s) not cleaned at the required frequency. Observed food debris on the condiments storage shelf below the front counter/register. Correct by next inspection.
