3717-1-06.4(F) / Drying mops.
Observed mops being dried using an unapproved method. -Mops were not properly hung to air-dry.
After use, mops shall be placed in a position that allows them to air-dry without soiling walls, equipment, or supplies. Correct By: 19-Jun-2018
The following violation(s) have been corrected since the last inspection.
3717-1-03.4(F)(1)/Time/temperature controlled for safety food - hot and cold holding.
(CORRECTED DURING INSPECTION) TCS foods were not being held at the proper temperature. -Observed multiple TCS foods inside the pizza prep table cooler to be above 41*F. Facility opened at 10:30 AM, approximately one half hour prior to time of inspection; PIC states pans were filled from the walk-in cooler roughly one hour prior to opening (9:30 AM).
PIC will temporarily follow a four (4) hour time limit for these foods using a sticker system to track, until this unit has been repaired and is holding proper temperature of 41*F or below. When the four (4) hour time limit has expired, TCS foods discussed during inspection (all meats, cheeses, and cut leafy greens) will be wholly discarded into the trash. To prevent the growth of pathogens, except during preparation, cooking, or cooling, or when time is used as a public health control, TCS food shall be held at 135°F or above (except that roasts cooked using time and temperature parameters in 3717-1-03.3 may be held at 130° F), or at 41°F or less.
3717-1-04.4(A)(1)/Equipment - good repair and proper adjustment.
Equipment and/or components are not maintained in good working order. -Observed the pizza prep table to not be holding proper temperature and be in need of repair. PIC states this was first noticed last night at time of closing, and maintenance has already been scheduled for today.
Equipment shall be maintained in a state of repair and condition that meets the requirements specified under rules 3717-1-04 and 3717-1-04.1 of this code. Correct By: 26-Jun-2018
