3717-1-04.4(I) / Manual warewashing equipment - wash solution temperature.
Critical Repeat Manual wash solution not being maintained at 110˚ F or above. Observed wash station reading 93 Degrees
Action: Water shall maintain 110 degrees during wash cycle.
3717-1-06.4(F) / Drying mops.
Mops dried improperly. Observed wet mop stored on floor.
Action: Mop shall be a position to allow and air dry between use.
