Critical Corrected During Inspection Food not properly protected from contamination by separation, packaging, and segregation. Observation: Condiments observed stored under raw shell eggs. Raw eggs should be stored below ready to eat items. PIC moved to appropriate location.

Utensils and equipment contacting non-TCS foods not cleaned at required frequency. Observation: Metal tray in bar cooler used to store clean inverted glasses had visible debris. Please clean with a frequency that precludes the accumulation of visible soil.

Utensils and equipment contacting non-TCS foods not cleaned at required frequency. Observation: Ice scoop for bulk ice machine was on top of cooler. Please clean once every 24 hours and store so it is not in contact with top of cooler.

Corrected During Inspection Improper storage of food items. Covered tray of food in walk in cooler observed below dripping condensate from cooler. PIC moved.

Corrected During Inspection Single-service and single-use articles not protected from contamination. Single service boats in front kitchen not stored in an inverted manner. PIC inverted.

Critical Corrected During Inspection Food contact surfaces not easily cleanable. Lid to squirt bottle in front kitchen was cracked and split. PIC discarded item

Fixed equipment not properly sealed or spaced for cleaning. Observation: Hand sink in front kitchen is separated from wall. Sink should be sealed to wall or spaced so that it can be cleaned behind.

Conducted and reviewed with Kitchen Trustee Zondra Adkins.
Discussed standards for hair restraints and prohibition of latex gloves as of 03/01/2019.
No food was being prepared or served at time of inspection.
Bar area was in operation.
Level IV activities consist of cooling and reheating in bulk.

Printed inspection and gave to PIC.

I - P - Employee Health: The operation had an employee health policy on file.
X - P - Chemical: Toxic materials are properly identified and stored.
