Critical Corrected During Inspection PIC unable to demonstrate knowledge by having no critical violations. Multiple critical violations observed during inspection. All critical violations corrected.

3717-1-02.4(A)(2) / PIC - Manager Certification
Repeat Facility does not have an employee with manager certification in food protection. No level 2 food safety manager observed. Obtain level 2 food manager certification by next standard inspection. Repeat Handwashing sign(s) not posted. No employee hand washing signs observed in men's and women's rest room at time of inspection. Post hand washing signs by next standard inspection.

3717-1-04.5(C) / Cooking and baking equipment - cleaning frequency
Cooking and/or baking equipment not cleaned when required. Observed upper interior surface of microwave in self service breakfast area to have dried food residue. Clean microwave by 1-17-23.

3717-1-03.4(F)(1)(a) / Time/temperature controlled for safety food - hot holding.
Critical Corrected During Inspection TCS foods not being hot held at the proper temperature. Observed tray of pork sausage patties with integral temperature of 101*F. PIC states she cooked as extra for hot holding and wasn't able to place them in the hot holding unit as turkey sausage was currently in there. PIC discarded pork sausage at time of inspection.

3717-1-03.4(F)(1)(b) / Time/temperature controlled for safety food - cold holding.
Critical Corrected During Inspection TCS foods not being cold held at the proper temperature. Observed single portion sized containers of cream cheese (57*F-70*F) and butter (57*F-68*F) with internal temperatures of greater than 41*F. PIC discarded cream cheese and butter during inspection.

3717-1-03.4(G) / Ready-to-eat, time/temperature controlled for safety food - date marking.
Critical Corrected During Inspection Refrigerated, ready-to-eat, TCS foods not properly date marked. Observed hard boiled eggs in small refrigerator with date mark indicating discard date of 2/7/23 when package was verified to have been open on 1/8/23. TCS foods shall be date marked for consumption or discard 6 days from prep/opening; for a total of 7 days. PIC correctly date marked eggs during inspection. Richland Public Health's date marking informational hand out provided during inspection.

Critical Corrected During Inspection Improper use of time as a public health control (4 hours). Facility currently utilizes time in lieu of temperature for hydrated waffle batter in self serve breakfast area. No time stamps for waffle batter indicated time product was pulled from temperature control. PIC discarded batter during inspection.

Corrected During Inspection No written procedures for time as a public health control. Facility did not have written procedures for time in lieu of temperature for waffle batter. Provided Richland Public Health's (RPH) time in lieu of temperature handout during inspection and GM completed to accurately reflect process.

Critical Corrected During Inspection Improper storage of poisonous or toxic materials. Observed bottle of quat sanitizer tablets stored in drawer with salt & pepper packets. PIC moved sanitizer tablets to proper location during inspection.

3717-1-03.2(Y) / Miscellaneous sources of contamination.
Food not protected from contamination. Observed personal food items stored above food for service in stand up refrigerator in kitchen area. Ensure food is stored separated from food for service. Correct today.

Nonfood-contact surfaces not easily cleanable. Observed lid to waffle batter holder in self service breakfast area to be melted/warped and no longer easily cleanable. Replace lids by next standard inspection.

Non-food contact surfaces of equipment are unclean. Observed interior surfaces of multiple cabinets in self serve breakfast area to have visible dried spillage/residues. Clean by 1-17-23.

Improperly cleaned storage area for refuse, recyclables, or returnables. Observed loose trash on ground around dumpster area. Clean dumpster area by 1-17-23.

Waste receptacles not covered properly. Observed no lid physically attached to dumpster at time of inspection, therefore, dumpster open when not in use. Ensure lid is reinstalled to allow dumpster to remain closed when not in use. Correct by next standard inspection.
