3717-1-04.1(KK) / Food equipment - certification and classification.
Repeat Equipment is not approved by a recognized testing agency. Two Frigidare refrigerator/freezers and a waffle ireon are not commercial grade. When these no long function properly, replace them with commercial grade equipment. All new equipment purchased from now on muct be commercial equipment.
Food equipment that is acceptable for use in a FSO or RFE shall be approved by a recognized food equipment testing agency.
3717-1-04.4(N)(3) / Manual and mechanical warewashing equipment, chemical sanitization (quaternary ammonium) - temp., pH, concentration, and hardness
Critical Corrected During Inspection A quatenary ammonium sanitizing solution did not meet the minimum requirements for temperatyure, concentration, and/or water hardness. Three compartment sink already set up the quaternary sanitizing sollution was found to be less that 100 ppm.
To prevent pathogen growth, a quaternary ammonium sanitizing solution shall: (a) Have a minimum temperature of 75F,(b) Have a concentration as specified and as indicated by the manufacturer's use directions included in the labeling, (c) Be used only in water with 500 ppm (mg/l) hardness or less, or used in water having a hardness no greater than specified by the manufacturer's label.
