3717-1-03.2(Y) / Miscellaneous sources of contamination.
Corrected During Inspection Observed improper storage of sanitizer bucket. Bucket was sitting on the floor in the preparation area. Please note that cross-contamination is possible if the sanitizer bucket is picked up off of the floor and placed on a preparation table. Observed baking mit sitting on the hand washing sink. Baking mit was exposed to splash contamination from the hand washing sink.
Food shall be protected from contamination that is not specified under 3717-1-03.2 (A) to (X).
3717-1-03.4(C) / Thawing - temperature and time control.
Corrected During Inspection TCS foods were not properly thawed. Observed two bags of sliced chicken thawing on the preparation table. Chicken was 31*F. PIC decided to thaw one bag of chicken with continuous running water at 70*F or less, while the other bag of chicken was placed back into the walk-in cooler.
TCS food shall be thawed as required in this rule.
3717-1-03.4(F)(1) / Time/temperature controlled for safety food - hot and cold holding.
Critical Corrected During Inspection TCS foods were not being held at the proper temperature. Observed sliced American cheese, approximately 2.5 pounds, sitting on a table out of refrigeration at a temperature of 46*F. PIC voluntarily destroyed.
To prevent the growth of pathogens, except during preparation, cooking, or cooling, or when time is used as a public health control, TCS food shall be held at 135°F or above (except that roasts cooked using time and temperature parameters in 3717-1-03.3 may be held at 130° F), or at 41°F or less.
3717-1-04(F) / Sponges - use limitation.
Repeat Corrected During Inspection Observed sponges being used to clean food contact surfaces.
To prevent pathogen harborage and illness, sponges may not be used in contact with cleaned and sanitized or in-use food contact surfaces.
3717-1-04.5(A)(3) / Cleanliness of nonfood-contact surfaces of equipment.
Corrected During Inspection Non-food contact surfaces of equipment are dirty. The ceiling in the microwave(s) had an accumulation of food splatter.
Nonfood-contact surfaces of equipment shall be kept clean.
