Irreversible registering temperature indicator not readily accessible for hot water mechanical warewashing operations. Correct prior to operating.

3717-1-05.4(B) / Outdoor storage surface.
Outdoor refuse storage surface not properly constructed and sloped to drain. Observed the dumpster setting on gravel. Outdoor storage sufaces shall be constructed of nonabsorbent material such as concrete or asphalt and shall be smooth, durable, and sloped to drain. Correct prior to operating.

Floors, walls, and/or ceilings not constructed of approved materials. Observed duct tape around the windows above the three compartment sink. Surfaces in a food service operation shall be smooth, durable, and easily cleanable. Correct prior to operating.

Physical facilities not maintained in good repair. Observed a chipped floor tile in the dish washing area. Correct prior to operating.

Comments
Conducted and discussed inspection with Erika and Gabriella. Thermometers, sanitizer, and test strips available in the facility. Hot water measured at 115*F at the time of inspection. Employee illness reporting agreement form, vomit/fecal clean-up procedures, choking poster, and food safety certificates on file in facility. Terminix pest control company visits are monthly and grease trap is routinely serviced. Discussed stocking the handwashing sink by the stove with soap and paper towels prior to operating. Discussed wiping down counters, window ledges, and top of dishwasher prior to operating.
