Critical PIC unable to demonstrate knowledge of temperatures and times for safe refrigerated food storage, hot holding, cooling and reheating. Cooked ground beef, grilled chicken, breaded chicken not being hot held at the correct temperature. Voluntarily destroyed.

Critical Corrected During Inspection Quaternary ammonium sanitizing solution at incorrect temperature, concentration, and/or water hardness. There was no sanitizer in the three compartment sink. There were clean dishes in the water that should have been sanitizing water. PIC let water out of sink and set up correct sanitizing water.

Critical Corrected During Inspection TCS foods not being hot held at the proper temperature. Four breaded chicken breast at 128*F, three grilled chicken breast at 129*F, and five pounds of cooked ground beef patties at 130*F. PIC voluntarily destroyed.
