3717-1-03.2(M) / Wiping cloths - use limitation.
Improper use and/or maintenance of wiping cloths. Observed a wet wiping cloth setting on the counter. Discussed maintaining wiping cloths in a bucket of sanitizer solution when not in use.

3717-1-04.5(A)(3) / Cleanliness of nonfood-contact surfaces of equipment.
Non-food contact surfaces of equipment are unclean. Observed residue on the bottom shelf inside the two door chicken cooler.

3717-1-05.4(B) / Outdoor storage surface.
Repeat Outdoor refuse storage surface not properly constructed and sloped to drain. Observed the dumpster setting on a gravel surface. Outdoor storage surfaces for refuse shall be nonabsorbent, smooth, durable, and sloped to drain. Correct by next inspection.

Discussed inspection with Roger, Judy, and Ashley. Pizza make table cooler cold holding items at a temperature of 42-43*F at the time of inspection. Cooler was turned down at the time of inspection. Discussed monitoring internal temps to ensure cold holding of 41*F or below. Emailed inspection report.
