Did not have signed employee illness reporting agreement and norovirus clean-up procedures. Emailed both to Mr. Bailely.

II - P / Good Hygienic Practices
Food employee working with exposed foods, clean equipment, utensils, linens or unwrapped single-service or single use articles was not experiencing discharge from eyes, nose, or mouth.

III - P / Preventing Contamination by Hand
Observed food employee washing hands when required.

IV - P / Demonstration of Knowledge
The person in charge is Certified in Food Protection. However, there were critical violations at time of inspection.

IX - P / Highly Susceptible Populations
Pasteurized eggs are used if served partially cooked. Only passteurized eggs are used.

V - P / Food from Approved Source
Foods are received from the following sources: US Foods and Sirna & Sons Produce.

All foods and equipment were at proper temperature.
