Critical Corrected During Inspection Unnecessary persons in the operation. During inspection school employee observed going thru kitchen facilities several times and there was nothing said to employee.CORRECTED, proper instruction given to PIC

Hot and cold holding equipment thermometer was missing, located incorrectly, or not easily readable. During inspection, dairy cooler had no thermometer observed in equipment.
Install thermometer for monitoring of cold holding of dairy milk
3717-1-04.5(A)(3) / Cleanliness of nonfood-contact surfaces of equipment.
Non-food contact surfaces of equipment are unclean. During inspection,the top of the Imperial Oven where pan of Bosco Sticks was stored, was observed with dirt and dust residue.

Conducted inspection with PIC; reviewed inspection findings with PIC. Risk Level III FSO activities include: Cook/Serve. PIC stated facility has no leftovers. Menu consisted of :Uncrustables (pre packaged), Boscko sticks (cooked) peaches, mixed vegetables (hot hold) ice cream bar (frozen), pasteurized dairy milk....Facility has water from Madison Community Water System
