3717-1-03.4(F)(1)(b) / Time/temperature controlled for safety food - cold holding.
Critical Corrected During Inspection TCS foods not being cold held at the proper temperature. Observed a tray of cut meats and cheeses in the walk-in fruit cooler with an internal temperature of 52*F. PIC voluntarily discarded tray of meats and cheeses at the time of inspection.

3717-1-03.4(G) / Ready-to-eat, time/temperature controlled for safety food - date marking.
Critical Corrected During Inspection Refrigerated, ready-to-eat, TCS foods not properly date marked. Observed a package of turkey breast in the deli cooler that had been opened today and was date marked for 10 days. Refrigerated, ready-to-eat TCS foods shall be held for a maximum of seven days. PIC removed date sticker for 10 days and added a label for 7 days.

3717-1-07(B) / Poisonous or toxic materials: Working containers - common name.
Critical Corrected During Inspection Working containers of poisonous or toxic materials not properly labeled. Observed a spray bottle of bleach water that was not labeled. PIC added label to bottle at the time of inspection.

3717-1-04.1(Y) / Temperature measuring devices.
Hot and cold holding equipment thermometer was missing, located incorrectly, or not easily readable. No thermometer available in the Haier mini cooler. Correct by next inspection.

3717-1-03.5(C)(2) / Food labels - packaged food
Corrected During Inspection Label on a food packaged in-house did not contain all required information. Observed the name and address of the facility missing on the bags of dried tart cherries and dark chocolate covered espresso and on the containers of mince meat in the retail freezer. PIC added facility name & address labels on products at the time of inspection.

3717-1-04.1(KK) / Food equipment - certification and classification.
Repeat Equipment not approved by a recognized testing agency. Observed a non-commercial Kitchen Aid mixer, Haier cooler, Kenmore refrigerator/freezer, Oster toaster, crockpot, and roaster. When equipment no longer functions properly, replace with commercial grade.

3717-1-04.5(A)(3) / Cleanliness of nonfood-contact surfaces of equipment.
Non-food contact surfaces of equipment are unclean. Observed residue on the back wall inside of the Beverage Air cider cooler in the retail area. Correct by: 10/12/20.

3717-1-06.4(A) / Repairing.
Physical facilities not maintained in good repair. Observed a section of exposed insulation on the ceiling in the cider room. Correct by next inspection.

3717-1-06.4(B) / Cleaning - frequency and restrictions.
Facility not maintained clean. Observed residue on the cooling unit and on the walls and ceiling of the walk-in apple cooler. Correct by next inspection.
