3717-1-03.4(F)(1)(b) / Time/temperature controlled for safety food - cold holding.
Critical Corrected During Inspection TCS foods not being cold held at the proper temperature. Observed Lemon Curd cookies and Cream Cheese Danishes being held at room temperature. Discussed the need for these items to be refrigerated due to TCS items used in product. PIC voluntarily discarded three danish and two curd cookies at time of inspection.

3717-1-04.1(L) / Ambient air and water temperature measuring devices - accuracy.
Ambient air and water thermometers are not accurate. Observed thermometers in the retail display case to be at 36F, when inspector thermometer is at 32F. Provided education about the calibration frequency and methods at time of inspection. Calibrate thermometers by end of day 11/22/2022.

3717-1-03.2(D) / Food storage containers - identified with common name of food.
Corrected During Inspection Working food containers not properly labeled. Observed pumpkin sauce and wheat flour mixture with no labels. PIC labelled at time of inspection.

3717-1-03.2(Y) / Miscellaneous sources of contamination.
Corrected During Inspection Food not protected from contamination. Observed cell phone charger and glasses on microwave. PIC had items removed at time of inspection.

3717-1-04.8(E)(3) / Single-service articles and single-use articles - storage.
Corrected During Inspection Single-service and single-use articles not protected from contamination. Observed espresso lids by the espresso machine not inverted. PIC had lids inverted and top lid discarded at time of inspection.

3717-1-04.4(S)(1) / Single-service articles and single-use articles - use limitation.
Re-use of single-service or single-use articles. Observed multiple single use items including: tinfoil, parchment paper, sterilite, and plastic food buckets being used more than once. Discontinue practice of reusing single use items immediately.

3717-1-04(G) / Wood - use limitation.
Improper use of food contact surfaces containing wood and/or wicker. Observed wood wicker being used for storage of breads behind the counter. Per the Ohio Uniform Food Code, "Wood and wood wicker may not be used as a food contact surface". Please have baskets lined or discontinue use by 11/28/2022.

Nonfood-contact surfaces constructed of unapproved materials. Observed duchess bread divider table to be unsealed wood. Please make surface smooth, durable, and easily cleanable by next standard inspection.

3717-1-04.5(D) / Nonfood-contact surfaces - cleaning frequency.
Corrected During Inspection Non-food contact surface(s) not cleaned at the required frequency. Observed cobwebs under the coffee station in the cabinets. PIC had cobwebs removed at time of inspection.

Comments
Conducted and reviewed with Darlene (PIC) and Jaded Sweitzer (EHSIT). Discussed the softening of butter and received the following guidance per the Ohio Department of Agriculture: " Butter is a borderline TCS product...set butter out at room temperature and use it the next day or set the butter out at room temperature and use it the same day".
