Improper storage of food items. Observed boxes of raw chicken setting on the floor inside of the walk-in cooler. PIC stated truck was received today. Correct by today.

Corrected During Inspection [52] Improper storage of single-service and single-use articles. Observed a box of plastic cup lids setting on the floor. PIC moved box to the storage shelf at the time of inspection.

Critical Repeat Corrected During Inspection Manual wash solution not being maintained at 110˚ F or above. Observed the wash water in the three compartment sink at 97*F. PIC drained wash water at the time of inspection.

Non-food contact surfaces of equipment are unclean. Observed debris on the table behind the fountain drink machine by the drive thru window. Correct by next inspection.

Comments
Discussed inspection with manager Jeff. Facility is partially cooking chicken tenders, cooling on trays in the walk-in and then bringing out a tray or two at a time to finish cooking. Tenders are then hot held on the make line after fully cooking. This process is conducted every day. Discussed a risk level three facility is only allowed to cool and reheat for hot holding in bulk with one item once a week. Facility will be licensed as a risk level four food service operation beginning on March 1, 2023. Emailed inspection report.
