3717-1-03.2(C) / Packaged and unpackaged food - preventing contamination by separation, packaging, and segregation
Critical Corrected During Inspection Food not properly protected from contamination by separation, packaging, and segregation. Observed bread pastries and bacon on racks that were not covered. PIC covered by placing a clean pan on the rack over the products.

3717-1-03.4(F)(1)(b) / Time/temperature controlled for safety food - cold holding.
Critical Corrected During Inspection TCS foods not being cold held at the proper temperature. Observed butter packets in a clear plastic container on top of the grab and go cooler in the front pastry area that were not refrigerated. PIC stated that these are usually stored in an insulated container that is stored in the freezer to keep the butter cold. PIC discarded butter from the un-insulated container at the time of inspection.

3717-1-04.1(Y) / Temperature measuring devices.
Hot and cold holding equipment thermometer was missing, located incorrectly, or not easily readable. Observed thermometers missing/broken in the Randell prep coolers by the drive thru window.

3717-1-04.4(B) / Cutting surfaces.
Cutting blocks or boards cannot be effectively cleaned and sanitized. Observed several cutting boards with staining. Manager stated that new cutting boards have been ordered.

3717-1-04.5(D) / Nonfood-contact surfaces - cleaning frequency.
Unclean nonfood-contact surfaces. Observed an accumulation of dust on the top of the knife rack holder. Observed soiled residue on the pop machine by the drive thru window.

3717-1-06.4(F) / Drying mops.
Mops dried improperly. Observed a mop stored in a bucket of water by the mop sink. Mops that are not in use shall be hung to air dry.

3717-1-06.4(D) / Cleaning ventilation systems, nuisance and discharge prohibition.
Ventilation system not maintained. Observed fans in walk-in cooler in need of cleaning due to an accumulation of dust.

Conducted inspection with Madison Lotz, SIT and Amy, Manager. Discussed inspection with Amy and Sarah, General Manager. Discussed safe filling levels for containers in the prep cooler since the top layer of tomatoes was above the cold holding limit. Tomatoes had been in the prep cooler for approximately two hours. Manager turned down the prep cooler during inspection. Inspection report sent via email.

VI - TCS Food(COS): TCS foods were not being held at the proper temperature. Observed butter packets out of refrigeration in a clear plastic container. PIC discarded butter packets.
VII - Protection from Contamination (COS): Observed food that was not properly protected from contamination by separation, packaging, and segregation. Observed bread and bacon on racks without a cover to protect from contamination. PIC covered by placing clean pans over the products.
X - P - Chemical: Toxic materials are properly identified and stored.
