Facility does not have an employee with manager certification in food protection. Observed PIC to have a manager certification, however the Ohio Department of Health certification was not available during inspection. -Obtain ODH Manager Certification in Food Protection for next standard inspection

3717-1-04.2(H)(2) / Temperature measuring devices - mechanical warewashing.
Irreversible registering temperature indicator not readily accessible for hot water mechanical warewashing operations. Obtain prior to operating.

3717-1-06.1(A) / Floors, walls, and ceilings.
Ceilings not smooth and easily cleanable. Ceiling tiles in kitchen area not smooth or easily cleanable. -Correct prior to next standard inspection

Discussed pre-licensing inspection with the Director of Career-Technical Education and the Culinary Arts Instructor/PIC. Copy of report sent via email.

*Unable to verify if the food prep sink is properly air gapped for backflow prevention. Ensure the prep sink drain is properly air gapped.
Facility to submit time in-lieu of temperature procedure for items such as lettuce, tomatoes, etc. for buffet. Template attached.
Ensure areas such as floors and shelving units are clean prior to operation.

Facility submitted license application at time of inspection. When full license fee is received, facility is approved to operate.
