3717-1-05.1(O)(1) / Using a handwashing sink - accessible at all times
Critical Corrected During Inspection Handwashing sink not accessible. Located in Deli Dept. Back hand sink had moveable cart in front of hand station.
Action: Keep hand sink accessible at all times. PIC: Moved cart during inspection.
3717-1-03.4(F)(1)(a) / Time/temperature controlled for safety food - hot holding.
Critical Corrected During Inspection TCS foods not being hot held at the proper temperature. Deli Dept. Observed chicken wings on hot warmer(display) being held at 90 degree's.

Action Taken: PIC threw chicken wings away. Note: Instructed PIC to monitor unit for future temperature holding temperature.

Improper storage of food items. Observed pastries located in bakery, on totes, to have no dust cover in place.
Action: Keep pastries fully covered during long breaks between production and display.

Nonfood-contact surfaces not easily cleanable. Observed handle on Deli cabinet sliding window to have Brown Duct tape in place.
Action: Remove duct tape, to provide a cleanable surface.

Non-food contact surfaces of equipment are unclean. Observed Lime Crusting outer surface located around Ice bin located in Meat Dept.
Action: Clean area on a frequency to prevent lime build-up.

Plumbing fixtures unclean. Observed heavy residue on floor drain located in produce.
Action: Clean floor drain thoroughly and on a routine basis.

Facility not maintained clean. Observed dirt/debris on floor located in Deli Cooler, mainly under wheeled carts. Observed Dirt/dust on floor through out Meat cutting room. Observed Food debris on floor under sheet pans in Bakery Observed Dirt/Dust on fan shield/blade in Meat cutting room. Observed dust on wall/ceiling located in Chicken Prep area.
Action: clean area on a frequency to prevent build-up.

Replace tile section/s to provide a smooth easy to clean surface.
