Level IV due to serving a hospital population and cooling/reheating in bulk soups and pasta. Using shallow pan cooling and cold running water (pasta). Thermometers are calibrated and used to verify reheating temperatures reach 165 degrees F. Observed proper date marking in coolers. Observed proper stacking order in coolers (meat is a separate cooler). Employee Health policy is exclusion until symptom free. All temperatures acceptable. No violations observed. |
