3717-1-03.2(M) / Wiping cloths - use limitation.
Corrected During Inspection Observed improper use and/or maintenance of wiping cloths.. At time of inspection, wiping cloth was observed on counter and not in wiping cloth bucket. CORRECTED, wiping cloth put in bucket with warm water and sanitizer
(2) Cloths that are in use for wiping counters and other equipment surfaces shall be: (a) held between uses in a chemical sanitizer of the appropriate concentration; and (b) shall be laundered daily;.
3717-1-03.2(Q) / Food storage - preventing contamination from the premises.
Corrected During Inspection Observed improper storage of food items. At time of inspection, tossed salad in Hobart refrigerator was not protected from splash or dust, CORRECTED, wrapping placed over salad
Food shall be protected from contamination by storing the food in a clean, dry location, where it is not exposed to splash, dust, or other contamination, and at least six inches above the floor.
3717-1-03.4(F)(1) / Time/temperature controlled for safety food - hot and cold holding.
Critical Corrected During Inspection TCS foods were not being held at the proper temperature. At time of inspection, RTE tossed salad was measured at 50degrees CORRECTED, salad was taken off food line and refrigerated
To prevent the growth of pathogens, except during preparation, cooking, or cooling, or when time is used as a public health control, TCS food shall be held at 135°F or above (except that roasts cooked using time and temperature parameters in 3717-1-03.3 may be held at 130° F), or at 41°F or less.
3717-1-04.1(L) / Ambient air and water temperature measuring devices - accuracy.
Amient air and water thermometers are not accurate to plus or minus 1.5 degrees C, or plus or minus three degrees F in the intended range of use. At time of inspection,the Cres Cor Crown X did not have accurate temperature reading and should be calibrated.
To prevent foodborne illness, ambient air and water temperature measuring devices that are scaled in Celsius or dually scaled in Celsius and Fahrenheit shall be designed to be easily readable and accurate to plus or minus 1.5° C in the intended range of use; Ambient air and water temperature measuring devices that are scaled only in Fahrenheit shall be accurate to plus or minus three degrees Fahrenheit in the intended range of use.
3717-1-04.4(A)(2) / Equipment components kept intact, tight, and adjusted
Equipment components are not intact, tight or properly adjusted. At time of inspeciton, the Norlake dairy cooler #3 had a gasket seal that was falling off and needed repair or replacement
Equipment components such as doors, seals, hinges, fasteners, and kick plates shall be kept intact, tight, and adjusted in accordance with manufacturer's specifications.
3717-1-04.5(A)(3) / Cleanliness of nonfood-contact surfaces of equipment.
Repeat Non-food contact surfaces of equipment are dirty. At time of inspection, Norlake #4 dairy cooler in dining area had ice buildup on the inside and needed defrosted to allow for smooth cleanable surface
Nonfood-contact surfaces of equipment shall be kept clean.
3717-1-06.3 (C)(2) / Employee accommodations - designated areas (lockers)
Repeat Corrected During Inspection At time of inspection, this office did observe personal employee food in areas where food was stored in the dairy cooler and where food was being prepared on prep table and needed relocated CORRECTED, food items relocated to designated area
Lockers or other suitable facilities shall be located in a designated room or area where contamination of food, equipment, linens, and single-service and single-use articles cannot occur.
