3717-1-04.1(KK) / Food equipment - certification and classification.
Equipment not approved by a recognized testing agency. Observed a non-commercial Magic Chef microwave. When equipment no longer functions properly, replace with commercial grade.

3717-1-04.1(H) / Nonfood-contact surfaces - cleanability
Nonfood-contact surfaces not easily cleanable. Observed the sealing/coating on the shelves missing/peeling in several locations in the walk-in cooler. Correct by next inspection.

3717-1-04.2(I) / Sanitizing solutions - testing devices.
No sanitizer test kit available. No bleach test strips available to determine the concentration of the sanitizer used in the dish washer. Correct by: 9/16/20.

3717-1-04.1(DD) / Warewashing machines - automatic dispensing of detergents and sanitizers.
Critical Warewashing machine does not automatically dispense detergent sanitizer and/or does not have a visual means to ensure detergent and sanitizer is automatically dispensed. Observed a container of liquid chlorine sanitizer mounted on the wall above the dishwasher. No sanitizer observed in the lines at the time of inspection. No sanitizer detected in dishwasher when operated at the time of inspection. Discussed using the three compartment sink with the quat sanitizer until dishwasher is repaired to dispense chlorine sanitizer at 50 ppm or above. Correct by: 9/16/20.

3717-1-04.5(A)(3) / Cleanliness of nonfood-contact surfaces of equipment.
Non-food contact surfaces of equipment are unclean. Observed residue on the inside of several Sterilite plastic containers holding clean utensils. Correct by: 9/16/20.

3717-1-06.4(N) / Maintaining premises - unnecessary items and litter.
Unnecessary or nonfunctional items and /or litter on premises. Observed an unused piece of equipment stored in the facility. PIC stated equipment intent is to be removed from the facility. Correct by next inspection.

Non-food contact surfaces of equipment are unclean. Observed a build-up of residue on the fan guards inside of the walk-in cooler. Correct by: 9/16/20
Comments
Conducted re-inspection with Sanitarian Supervisor Wes Engelbach. Discussed re-inspection with manager Toni. Dishwasher not in operation at the time of re-inspection. Manager unsure when dishwasher will be put back into operation. Discussed obtaining and using chlorine test strips to determine if sanitizer is at the proper concentration of 50 ppm. Call the health department to schedule an inspection once dishwasher is operating. Emailed re-inspection report.
