Critical Corrected During Inspection PIC unable to demonstrate knowledge of cleaning and sanitizing. PIC unable to state the correct strengths that sanitizer is made up in facility. Information provided at time of inspection of location of information.

3717-1-02.4(B)(2)(g) / PIC: Demonstration of Knowledge - Stating required temperatures and times for safe storage, holding, cooling, reheating of TCS food
Critical Corrected During Inspection PIC unable to demonstrate knowledge of temperatures and times for safe refrigerated food storage, hot holding, cooling and reheating. PIC unable to state the temperatures and times for the parameters to properly cool foods. Cooling log and information provided at time of inspection.

3717-1-03.2(C) / Packaged and unpackaged food - preventing contamination by separation, packaging, and segregation
Critical Repeat Corrected During Inspection Food not properly protected from contamination by separation, packaging, and segregation. Several items in walk in freezer observed to be uncovered. PIC covered at time of inspection.

3717-1-04.5(C) / Cooking and baking equipment - cleaning frequency
Cooking and/or baking equipment not cleaned when required. Microwave by hand sink had visible residue on inside ceiling. Please clean by 04/27/22

3717-1-03.2(D) / Food storage containers - identified with common name of food.
Corrected During Inspection Working food containers not properly labeled. Jug of lemonade in make table by drive through was not labeled with common name. PIC labeled at time of inspection.

3717-1-02.2(G) / Jewelry - prohibition.
Corrected During Inspection Food employees wearing jewelry on arms or hands during food preparation. Employee observed with watch preparing food. PIC had watches removed at time of inspection.

3717-1-03.2(M) / Wiping cloths - use limitation.
Corrected During Inspection Improper use and/or maintenance of wiping cloths. Damp wiping cloth observed on frozen yogurt machine. PIC removed. When not in use wiping cloths should be stored in sanitizing solution once they have been used.

3717-1-04.8(G)(2) / Kitchenware and tableware - handling.
Corrected During Inspection Knives, forks and spoons that are not prewrapped improperly presented. Utensils in bin above make table by drive through were not presented so only nonfood contact surfaces are being contacted by hand when removed. PIC moved spoon so handle was presented.

3717-1-04.4(S)(1) / Single-service articles and single-use articles - use limitation.
Re-use of single-service or single-use articles. Distilled water jug reused for lemon aid storage. Facility is to discontinue the use of single use items by next standard inspection.

3717-1-04.1(H) / Nonfood-contact surfaces - cleanability
Nonfood-contact surfaces not easily cleanable. Door to make table by drive through has shipping film that has begun peeling. Please remove so surface is smooth, durable and easily cleanable by next standard inspection.

3717-1-04.5(A)(3) / Cleanliness of nonfood-contact surfaces of equipment.
Non-food contact surfaces of equipment are unclean. Top of door to make table by drive through has visible residue. Please clean by 04/27/22

3717-1-06.4(A) / Repairing.
Repeat Physical facilities not maintained in good repair. Floor in several locations in the facility is deteriorating so that it is no longer smooth durable and easily cleanable. Please repair by next standard inspection.

3717-1-06.4(B) / Cleaning - frequency and restrictions.
Facility not maintained clean. Wall behind hot holding units used for dipping chocolate banana's has visible residue. Please clean by 04/27/22

3701-21-25(I) / Person in charge certification in food protection
FSO did not have a person in charge per shift with the person in charge certification in food protection. Manager with manager certificate was not present at time of inspection and no one present had person in charge certificate. Please obtain by reinspection.

Conducted and reviewed with PIC Olivia Manuella.
Discussed hair restraints. Hair is to be effectivly restrained by hair restraints. If wearing a hat, hair must be restrained by it.
Discussed dog treats in facility that are given away. They are to be stored below or segregated from items for service, utensils or single use items.
Per PIC facility cools and reheats ready to eat foods for hot holding more than once a week. Facility may need to be elevated to a risk level IV operation next licensing year.
