Critical Corrected During Inspection Handwashing sink is being used for purposes other than handwashing. Hand wash sink in kitchen A20 had Sanitizer bucket stored inside.
PIC removed.
3717-1-04.5(A)(1) / Cleanliness of equipment food-contact surfaces and utensils.
Critical Corrected During Inspection Equipment food-contact surfaces or utensils are unclean. The ice schute on the ice machine in kitchen A-20 had a visible residue build-up on the flap.

3717-1-04.4(N)(3) / Manual and mechanical warewashing equipment, chemical sanitization (quaternary ammonium) - temp., pH, concentration, and hardness
Critical Corrected During Inspection Quaternary ammonium sanitizing solution at incorrect temperature, concentration, and/or water hardness. Sanitizer bucket in A47 sanitizing solution did not read on the test strip. PIC remade a new bucket of santizer.

Critical Corrected During Inspection Equipment food-contact surfaces or utensils are unclean. Can openers in the kitchen and the produce prep area had food build-up on them.

3717-1-03.4(F)(1)(b) / Time/temperature controlled for safety food - cold holding.
Critical Corrected During Inspection TCS foods not being cold held at the proper temperature. Sliced tomatoes about 1 1/2# found at 49*F, Swiss cheese 2# found at 48*F, and American cheese 1# found at 48*F in the sandwich well were voluntarily destroyed by PIC. Foods on the tray making station were found to be out of temperature and voluntarily destroyed by PIC. Macaroni salad (3) at 61*F - 48*F, cole slaw (1) at 57*F, fruit plate (1) at 57*F, fruit salad (6) 58*F, cheese cake (3) at 58*F.

Critical Corrected During Inspection Refrigerated, ready-to-eat, TCS foods not properly date marked. Tuna salad (2) and Chicken salad (2) were datemarked with expired date in kitchen B-31.PIC voluntarily discarded. Sliced tomatoes in produce walk-in cooler 11/2# were not datemarked PIC voluntarily discarded.

Corrected During Inspection Equipment and utensils are not being air dried. Observed clean dishes being stacked while wet.

Corrected During Inspection Clean equipment and utensils not stored in a self-draining position and covered or inverted.Bowls and salad dishes in warewashing clean storage area were not covered or inverted. Clean dishes in the tray making area on a rack were not covered or inverted.

Corrected During Inspection Single-service or single-use articles, kitchenware, or tableware not handled, displayed, or dispensed properly Clean utensils in a drawer were improperly stored with handles not in array.

Corrected During Inspection Single-service and single-use articles not protected from contamination. Single use coffee filters were not protected.

3717-1-04.4(A)(3) / Equipment - cutting or piercing parts of can opener not maintained.
Corrected During Inspection Can opener blade dull or creating metal fragments in the produce prep area. Can opener was pulled from service until the blade can be replaced.

Non-food contact surfaces of equipment are unclean. Bev Air 3 door cooler in the pizza kitchen had black build-up on gaskets and standing water. Correct by next inspection.

Critical Corrected During Inspection Insufficient air gap between the flood rim and the water supply inlet. Bulk ice machines in A20 and by dry storage did not have Air break. PIC had maintenance

3717-1-06(A)(1) / Indoor areas - surface characteristics
Floors, walls, and/or ceilings not constructed of approved materials. Acoustical tile was present in pizza kitchen. When tiles need changed, replace with surface with non-absorbent, smooth, durable and easily cleanable.

Ventilation system not maintained. Ceiling vent in tray preparation area had an accumulation of dust. Please clean before next inspection.
