Critical Corrected During Inspection Food not properly protected from contamination by separation, packaging, and segregation. Observed one container of diced cucumbers opened and stored in walk in cooler without lid/cover. PIC covered during inspection.

3717-1-04.4(N)(3) / Manual and mechanical warewashing equipment, chemical sanitization (quaternary ammonium) - temp., pH, concentration, and hardness
Critical Corrected During Inspection Quaternary ammonium sanitizing solution at incorrect temperature, concentration, and/or water hardness. Observed one bucket of working sanitizer solution on lower shelf of make line to be at 150 ppm when minimum required is 200 ppm. PIC remade solution to proper strength at time of inspection.

3717-1-03.2(D) / Food storage containers - identified with common name of food.
Working food containers not properly labeled. Observed container filled with 2 oz cups of diced onions not labeled and squeeze bottles of hot sauce without labels. Ensure working food storage containers contain label with common name of food. PIC labeled onions at time of inspection. Label hot sauce squeeze bottles in servers are today.

3717-1-04.1(H) / Nonfood-contact surfaces - cleanability
Nonfood-contact surfaces not easily cleanable. Observed metal storage rack for clean equipment and utensils by dishwashing area to contain visible rust on shelves. At time of inspection, observed that facility has made progress with resurfacing of multiple shelving racks previously observed to have visible rust with a smooth, easily cleanable plastic surface. Resurface or replace metal storage rack near dishwashing area by next standard inspection.

Equipment components are not intact, tight or properly adjusted. Observed seal on door of Arctic Air freezer in storage room to be broken. Repair or replace by next standard inspection.

3717-1-04.3(B) / Fixed equipment installation - spacing or sealing.
Fixed equipment not properly sealed or spaced for cleaning. Observed existing seal around mop sink at wall juncture to cracked and broken. Reseal mop sink around wall juncture by next standard inspection.

Corrected During Inspection Nonfood-contact surfaces not easily cleanable. Observed plastic lid in clean storage area with large crack and no longer easily cleanable. PIC discarded lid during inspection.

3717-1-04.5(A)(3) / Cleanliness of nonfood-contact surfaces of equipment.
Non-food contact surfaces of equipment are unclean. Observed very bottom interior surfaces of toaster to contain crumb build up. Clean interior bottom of toaster by 3-31-23.

Repeat Non-food contact surfaces of equipment are unclean. Observed underside of plastic housing on the Pepsi fountain machine at servers station closest to rest rooms to have visible scale build-up. Remove scale by 3-31-23.

Physical facilities not maintained in good repair. Observed broken tile allowing for collection of grease and other residues on floor directly below fryer area. Also observed a piece of tiled coving near mop sink to be pulling away from wall. Repair tiles by next standard inspection.
