3717-1-03.4(F)(1)(b) / Time/temperature controlled for safety food - cold holding.
Critical Corrected During Inspection TCS foods not being cold held at the proper temperature. Containers of applesauce made on 9/28 & 9/29 in the Kenmore refrigerator at 55-61*F. PIC voluntarily discarded applesauce at the time of inspection.

3717-1-03.4(G) / Ready-to-eat, time/temperature controlled for safety food - date marking.
Critical Corrected During Inspection Refrigerated, ready-to-eat, TCS foods not properly date marked. Observed opened ham and chicken in the deli case without a date mark. PIC removed items from sale at the time of inspection.

3717-1-04.2(A) / Equipment - cooling, heating, and holding capacities.
Inadequate equipment available for cooling, heating or holding food. Ambient air temperature inside the Kenmore refrigerator at 48-50*F at the time of inspection. Refrigerator shall not be used to store perishable (TCS) items until unit is cold holding at 41*F or below.

3717-1-04.1(Y) / Temperature measuring devices.
Corrected During Inspection Hot and cold holding equipment thermometer was missing, located incorrectly, or not easily readable. No thermometer observed in the retail desserts cooler. PIC placed thermometer in cooler at the time of inspection.

3717-1-06.1(M) / Outer openings - protected.
Outer opening not protected. Observed open doors at the time of inspection.

3717-1-06.4(K) / Controlling pests.
Critical Presence of live insects. Observed live flies throughout the kitchen and inside the display case. Correct by: 10/11/21.

3717-1-04.4(A)(2) / Equipment components kept intact, tight, and adjusted
Equipment components are not intact, tight or properly adjusted. Observed a ripped gasket on the door of the True cider cooler.

3717-1-04.1(KK) / Food equipment - certification and classification.
Repeat Equipment not approved by a recognized testing agency. Observed a refrigerator/freezer, mini cooler, mixer, chest freezer and crockpots/roasters that were non-commercial grade. When equipment no longer functions properly, replace with commercial grade.

3717-1-04.5(D) / Nonfood-contact surfaces - cleaning frequency.
Non-food contact surface(s) not cleaned at the required frequency. Observed a build-up of ice on the cooling unit inside of the mini cooler. Correct by: 10/11/21.

3717-1-04.5(A)(3) / Cleanliness of nonfood-contact surfaces of equipment.
Non-food contact surfaces of equipment are unclean. Observed residue on the bottom shelf inside of the True cider cooler. Correct by: 10/11/21.

3717-1-06.4(B) / Cleaning - frequency and restrictions.
Facility not maintained clean. Observed a build-up of residue on the vents above the donut fryer. Correct by: 10/11/21.

Complaint on 01-Oct-2021 :
Discussed inspection and complaint with Anne Joudrey. Observed approximately half a dozen flies in the display case at the time of inspection. Display case doors are kept closed when donuts are not actively being served. A bug zapper is installed on the wall to the right of the display case. Fly tape has been placed throughout the facility over non-food prep areas. Observed open doors at the time of inspection. Discussed installing screen doors to prevent entry of flies. Discussed contacting a licensed pest control company. Facility typically contracts with Duncan Pest Control Services. Re-inspection to occur on Monday, October 11, 2021. Emailed inspection report.
