Facility does not have an employee with manager certification in food protection. Correct by next inspection.

3717-1-05.1(O)(2) / Using a handwashing sink - other uses prohibited.
Critical Corrected During Inspection Handwashing sink is being used for purposes other than handwashing. Observed a food employee filling glasses from the hand washing sink. Discussed using hand sink for hand washing purposes only.

3717-1-04.4(N)(3) / Manual and mechanical warewashing equipment, chemical sanitization (quaternary ammonium) - temp., pH, concentration, and hardness
Critical Repeat Quaternary ammonium sanitizing solution at incorrect temperature, concentration, and/or water hardness. Quat sanitizer at the three compartment sink was dispensing around 100 ppm at the time of inspection. PIC stated a work order will be placed for the unit to dispense at 200-400 ppm. Correct by: 11/1/22.

3717-1-03.4(E) / Cooling methods - temperature and time control.
Improper method for cooling TCS foods. Observed a recently cooked whole roast that had just started the cooling process inside of the walk-in cooler. Discussed slicing into smaller portions to rapidly cool. PIC stated roast would be sliced in smaller portions to cool.

3717-1-04.8(E)(3) / Single-service articles and single-use articles - storage.
Repeat Single-service and single-use articles not protected from contamination. Observed unprotected coffee filters stored next to the coffee machine. Discussed keeping filters in a bag or container to protect from dust. Correct by: 11/1/22.

3717-1-04.5(A)(3) / Cleanliness of nonfood-contact surfaces of equipment.
Non-food contact surfaces of equipment are unclean. Observed residue on the plastic shelf used to store milk inside the walk-in cooler. Correct by: 11/1/22.

Non-food contact surfaces of equipment are unclean. Observed residue on the upper lid inside of the ice machine. Correct by: 11/1/22.

Physical facilities not maintained in good repair. Observed a section of peeling ceiling by the walk-in cooler. Correct by next inspection.

Repeat Facility not maintained clean. Observed dust on the fire suppression system above the grill and stove/oven. Correct by: 11/1/22.

Discussed inspection with Teresa and Sherri. Re-inspection to occur on Tuesday, November 1, 2022. Emailed inspection report and cooling foods safely handout.
