Observed a food employee filling glasses from the hand washing sink. Discussed using hand sink for hand washing purposes only. |
3717-1-04.4(N)(3) / Manual and mechanical warewashing equipment, chemical sanitization (quaternary ammonium) - temp., pH, concentration, and hardness Critical Repeat Quaternary ammonium sanitizing solution at incorrect temperature, concentration, and/or water hardness. Quat sanitizer at the three compartment sink was dispensing around 100 ppm at the time of inspection. PIC stated a work order will be placed for the unit to dispense at 200-400 ppm. Observed a recently cooked whole roast that had just started the cooling process inside of the walk-in cooler. Discussed slicing into smaller portions to rapidly cool.
