Violations: A summary of the violations found during the inspection are listed below.
3717-1-04.4(L) / Mechanical warewashing equipment - hot water sanitization temperatures
Critical Hot water for mechanical sanitization is below required temperature. Dishwasher could not reach 160*F for hot water sanitizing. PIC is call company to come repair the unit today.

3717-1-03.4(F)(1)(b) / Time/temperature controlled for safety food - cold holding.
Critical Repeat TCS foods not being cold held at the proper temperature. Boiled eggs at 44*F in the refrigeration unit for self-service. PIC turned down unit and the product was 42*F within 20 minutes.

3717-1-04.2(A) / Equipment - cooling, heating, and holding capacities.
Repeat Corrected During Inspection Inadequate equipment available for cooling, heating or holding food. Whynter refrigerator was at 45*F ambient air temperature. PIC turned down the unit and it was at 42*F within 20 minutes.

3717-1-04.1(Y) / Temperature measuring devices.
Corrected During Inspection Hot and cold holding equipment thermometer was missing, located incorrectly, or not easily readable. Whynter refrigerator did not have a thermometer. PIC put one in during inspection.

3717-1-04.1(KK) / Food equipment - certification and classification.
Equipment not approved by a recognized testing agency. The new Whytner BR-091WS refrigerator is not commercial grade. It can not be used to hold time temperature controlled foods for safety. Replace with commercial grade piece of equipment. Correct today by removing all TCS foods and not placing any back into this unit.

3717-1-05.1(S) / Plumbing system - maintained in good repair.
Plumbing system not properly maintained or repaired. Dishwasher over flowed to the floor during inspection. PIC stated she would contact company today and have it repaired.

Inspection was conducted and discussed with Melanie PIC. Please be advised the new refrigeration Whynter BR-091WS unit is not commercial grade and will not be allowed to hold time temperature controlled food for safety. It may be used for non-time temperature controlled foods for safety like bottles of water. Please be advised to hold TCS foods it must be commercial grade. Reinspection April 26, 2021. Firm is not cooking any foods at this time. They are serving all ready boiled eggs, yogurt, pastries, and dry cereal. The do not know when they will start to serve hot foods again.

X - P - Chemical: Sulfites are not applied to fresh fruits or vegetables intended for raw consumption.
X - P - Chemical: No unapproved food or color additives are used.
VI - TCS Food: TCS foods were not being held at the proper temperature.
X - P - Chemical: Toxic materials are properly identified and stored.
