Observed raw ground beef stored above raw steaks and raw ground turkey stored above raw pork chops in retail meat area. PIC relocated items to achieve proper stacking order based on cooking temperatures during inspection.

Observed cheese in deli cooler not exempt from date marking to have date marking for greater than 7 total days. Pepperjack (1/28-2/17), Colby Jack (1/27-2/16), White American and Yellow American. PIC had employee correct date mark to indicate consumption/discard within a total of 7 days from date of listed prep during inspection. Cheese Date Mark exemption list emailed with inspection report. Ensure any cheeses not listed on exemption list are date marked for consumption/discard 6 days after prep/opening, for a total of 7 days.

Inspection conducted and reviewed with 2 supervisors/coaches. Risk level 3 activities include cooling of rotisserie chickens, slicing of deli meats & cheeses, and heating/cooking for hot holding. Inspection report emailed.
