3717-1-02.4(C)(14) / PIC: duties - ensure employees are properly trained in food safety, including food allergy awareness.
Critical Corrected During Inspection Person in charge did not ensure their employees are properly trained in food safety. -Observed multiple critical violations regarding cooling procedures, glove use and date marking. PIC and employee corrected all critical violations at time of inspection.

3717-1-03.2(N)(1) / Gloves - use limitation
Critical Corrected During Inspection Single-use gloves used improperly. -Observed employee wearing single-use gloves touch apron, open oven and then go to work with food without changing gloves. Discussed proper glove use and when to change gloves with employee

3717-1-03.4(D) / Cooling - temperature and time control.
Critical Corrected During Inspection Improper cooling of TCS food. -Observed cooked apples to be setting on the stove with no temperature control at 91*F. Employee states the apples were taken off of the heat 1 hour prior. Employee properly re-heating apples to 165*F and then placed in small portions in freezer to rapidly cool.

Critical Repeat Corrected During Inspection Refrigerated, ready-to-eat, TCS foods not properly date marked. -Observed a container of applesauce and gallons of apple cider with no date mark. PIC properly date marked all products.

3717-1-07(B) / Poisonous or toxic materials: Working containers - common name.
Critical Corrected During Inspection Working containers of poisonous or toxic materials not properly labeled. -Observed a spay bottle with bleach solution to not be labeled. PIC placed a proper label on bottle.

3717-1-05(G) / Private water - water quality analysis.
Most recent water quality sample report for private water system not on file. -PIC states a copy of water sample results will be sent via email.

3717-1-03.4(E) / Cooling methods - temperature and time control.
Corrected During Inspection Improper method for cooling TCS foods. -Observed cooked apples to not be cooled using proper parameters or methods. Product was cooked and then left at room temperature until it can be processed without burning hands. Discussed proper cooling time/temperature parameters and methods that are required to be used when product is taken off the heat. PIC re-heated product to 165*F to be properly cooled.

Packaged food labels are not in compliance with standards of identity. -Observed eggs from facility farm to be labeled in re-used cartoons with the previous information still visible.

Label on a food packaged in-house did not contain all required information. -Observed frozen applesauce to be missing manufacturer information.

Re-use of single-service or single-use articles. -Observed multiple white single-use containers being re-used to store food products such as walnuts and applesauce.

Critical Corrected During Inspection Equipment and/or utensils improper construction. -Observed a blue sterilite bin used to store dry cake mix. PIC placed product into a food grade plastic bag and then in bin.

3717-1-04.1(KK) / Food equipment - certification and classification.
Equipment not approved by a recognized testing agency. -Observed noncommercial equipment being used: Kenmore freezer/refrigerator unit, Oster toaster, Haier mini fridge, and multiple crock-pots and roaster. If/when equipment no longer functions, replace with commercial grade.

3717-1-04.5(D) / Nonfood-contact surfaces - cleaning frequency.
Repeat Unclean nonfood-contact surfaces. -Observed walk-in cooler to contain dust/mildew on ceiling and condenser unit.

Verbally discussed:
-Rules updates: 2.3(C): Ensure all food employees effectively restrain hair by wearing a hair net, hat, beard restraint, etc. 3.2(N): Latex gloves are prohibited for use.
-Facility to send most recent water sample result to Sanitarian.

Apple pressing was not in process at time of inspection. Apples are pressed as a continuous process. Equipment is cleaned and sanitized in between each use with bleach water. Apples used are washed, brushed and chlorinated prior to being pressed. Finished product is chilled to 32-34*F. Product is non-pasteurized and contains proper warning statement on label. Cider is only sold on site.

Facility purchased a UV light machine to utilize during the apple pressing process. Russ states the piece of equipment has been tested and certified to obtain a 5-log reduction of product. Russ to send equipment specification to Sanitarian.
