Violations: A summary of the violations found during the inspection are listed below.
3717-1-05.1(C)(1) / Handwashing sink - required water temperature
Repeat Handwashing sink water below 100°F. Observed main kitchen handwashing sink to be at 56F and the employee rest-room to be at 85F. Ensure handwashing sinks reach a temperature of at least 100F. PIC stated the facility is currently repairing a hot water tank which had stopped functioning due to the severe weather recently. Correct by next standard inspection.

3717-1-06.2(E) / Handwashing signage.
Corrected During Inspection Handwashing sign(s) not posted. Observed no handwashing poster by warewashing unit. Ensure all sinks used by employees have handwashing signage. PIC posted signage at time of inspection.

3717-1-04.5(A)(1) / Cleanliness of equipment food-contact surfaces and utensils.
Critical Corrected During Inspection Equipment food-contact surfaces or utensils are unclean. Observed deli slicer to have visible residue on the food contact and non-food contact portion of the slicer and blade. Ensure slicer is washed, rinsed, and sanitized every four hours. PIC had unit cleaned at time of inspection.

3717-1-04.5(C) / Cooking and baking equipment - cleaning frequency
Repeat Corrected During Inspection Cooking and/or baking equipment not cleaned when required. Observed roof of microwave in the serving line area to have visible residue. PIC had cleaned at time of inspection.

3717-1-04.5(B)(1) / Equipment food-contact surfaces and utensils - cleaning frequency.
Critical Corrected During Inspection Food equipment surfaces not cleaned at required frequency. Through discussion, PIC stated fry baskets (held without temperature control) that are used for TCS items are cleaned once a week. Also observed fry baskets with visible residue. Ensure utensils and equipment that contacts TCS items are washed, rinsed, and sanitized at a frequency of at least every 4 hours. Education provided and PIC had fry baskets sent to warewashing area at time of inspection.

3717-1-03.2(D) / Food storage containers - identified with common name of food.
Corrected During Inspection Working food containers not properly labeled. Observed no common name on a container of thickener. Ensure all foods/products not easily recognizable and not in original packaging are labeled with common name. PIC had labeled at time of inspection.

3717-1-04.4(B) / Cutting surfaces.
Corrected During Inspection Cutting blocks or boards cannot be effectively cleaned and sanitized. Observed 2 cutting boards with excessive scoring and staining. Ensure cutting boards are free of excessive scoring, deep scoring, and staining to avoid pathogen growth to be the inability to be effectively washed, rinsed, and sanitized. PIC removed cutting boards from operation at time of inspection.

3717-1-04.4(A)(3) / Equipment - cutting or piercing parts of can opener not maintained.
Corrected During Inspection Can opener blade dull or creating metal fragments. Observed can opener to be dull and creating metal fragments. Ensure can opener blades are maintained sharp in order to avoid metal contamination of canned products. PIC had can opener cleaned and discontinued for use until a new blade can be opened.

3717-1-04.1(H) / Nonfood-contact surfaces - cleanability
Nonfood-contact surfaces not easily cleanable. Observed bare dry wall in the range area and the warewashing area, rendering the surfaces no longer smooth, durable, non-aborbent, and easily cleanable. PIC stated maintenance is aware of the issue. Correct by next standard inspection.

3717-1-04.1(A) / Equipment and utensils - durability and strength.
Non-durable equipment observed. Observed garbage disposal attached to the mechanical warewashing unit to be broken. PIC stated a plan in place to have the unit repaired, part is on order. Repair by next standard inspection.

3717-1-05.4(N) / Covering receptacles.
Corrected During Inspection Waste receptacles not covered properly. Observed dumpster door open. Ensure dumpster door remains closed after each use to prohibit the potential for pest harborage. PIC closed at time of inspection.

3717-1-06.4(B) / Cleaning - frequency and restrictions.
Facility not maintained clean. Observed walls behind the skillet and fryers to have visible residue. Clean by 4/4/2023.

3717-1-06.4(F) / Drying mops.
Corrected During Inspection Mops dried improperly. Observed mops drying in the mop bucket. Ensure mops are stored in such a manner that allows for sufficient airflow. PIC hung mops at time of inspection.

3717-1-06.4(A) / Repairing.
Repeat Physical facilities not maintained in good repair. Observed various chipped and cracked tiles and coving in the main kitchen area, and near the mechanical warewashing unit, rendering the surfaces no longer smooth, durable, and easily cleanable. PIC stated there is a plan in place to have the coving in the main kitchen area repaired. Repair by next standard inspection.

3717-1-06.2(I)(3) / Lighting - intensity (50 FC)
Repeat Light intensity less than fifty foot candles in required areas. Observed lights burned out (less than 10 CFP) in the gas range and prep area. PIC stated the light blew out due to the recent severe weather. PIC stated that maintenance is aware of the issue. Correct by 4/4/2023.
