3717-1-02.4(C)(9) / PIC: duties - ensure employees are properly maintaining temperatures of TCS foods during hot and cold storage
Critical Corrected During Inspection PIC did not ensure employees are properly maintaining temperatures of TCS foods during hot and cold storage. Observed various coolers holding TCS items that were inoperable at time of inspection. Ensure all coolers and units holding TCS items are working effectively to keep proper holding temperatures. PIC is to monitor the units in question and ensure the ability of the unit to hold proper temperature and/or have it repaired/replaced. Education provided at time of inspection.

Critical Repeat Corrected During Inspection Equipment food-contact surfaces or utensils are unclean. Observed green staining on a knife in the clean storage area. PIC discontinued use of knife at time of inspection.

Repeat Corrected During Inspection Cooking and/or baking equipment not cleaned when required. Observed roof of microwave in the lobby had visible residue. PIC had cleaned at time of inspection.

3717-1-04.4(N)(3) / Manual and mechanical warewashing equipment, chemical sanitization (quaternary ammonium) - temp., pH, concentration, and hardness
Critical Corrected During Inspection Quaternary ammonium sanitizing solution at incorrect temperature, concentration, and/or water hardness. Observed sanitizer bucket under the barista dump sink to be less than 150 ppm. Per manufactures instructions, ensure sanitizer concentration is between 200-400ppm. PIC had remade at time of inspection.

Critical Repeat Corrected During Inspection TCS foods not being cold held at the proper temperature. Observed the following out of acceptable cold holding temperatures in the first and last cold holding units in the prep area: sliced chicken, American cheese, Smokehouse BBQ premade paninis, Steak and White Cheddar premade paninis, and Chipotle Chicken and Avocado premade paninis. Ensure coolers are able to hold cold TCS items at 41F or below before use. Paninis were made at 9:03am and EHSIT took temperatures at 11:27 am. PIC voluntarily discarded at time of inspection. See voluntary destruction for weight, temperatures, and amounts.

Observed the following out of acceptable cold holding temperatures in the grab and go cooler: mixed berry yogurt, and fruit cup. Ensure cooler is able to hold cold TCS items at 41F or below before use. PIC voluntarily discarded at time of inspection. See voluntary destruction for weight, temperatures, and amounts.

Corrected During Inspection Clean equipment and utensils not stored in a self-draining position and covered or inverted. Observed various pans, measuring cups, and storage containers not inverted. Ensure equipment is inverted to avoid contamination via sneeze, splash, and dust. PIC had inverted at time of inspection.

3717-1-04.1(H) / Nonfood-contact surfaces - cleanability
Nonfood-contact surfaces not easily cleanable. Observed stickers with residue on the TurboChef cooler being used to hold the door shut, rendering the surface no longer smooth, durable, non-absorbent, and easily cleanable. Remove by 4/3/2023.

Repeat Non-durable equipment observed. Observed grab and go cooler, first and last prep coolers to be holding temperatures between 48F-51.6F. Ensure equipment functions as designed. PIC is to monitor coolers to ensure they remain between acceptable parameters at all times, and discontinue use if not. Repair by next standard inspection.

Can opener blade dull or creating metal fragments. Observed interior of the Turbochef ovens to have visible residue. Clean by 4/3/2023.

3717-1-04.4(B) / Cutting surfaces.
Repeat Cutting blocks or boards cannot be effectively cleaned and sanitized. Observed cutting boards in the bakery area to have scoring and staining, which could allow for pathogen growth. Replace or resurface by 4/3/2023.

Non-food contact surfaces of equipment are unclean. Observed drawers of the prep surfaces of the bakery to have visible residue. Clean by 4/3/2023.

Corrected During Inspection Non-food contact surfaces of equipment are unclean. Observed food debris on the bottom of the cabinet that hold the waste receptacle. PIC had cleaned at time of inspection.

Waste receptacles not covered properly. Observed cardboard dumpster door broken. Ensure dumpster door remains attached and closed after each use to prohibit the potential for pest harborage. Contact waste provider in regards to obtaining new lid or dumpster. Correct by next standard inspection.

No drain plugs in waste receptacle. Observed no drain plugs in the dumpster. Contact provider in regards to obtaining required drain plug for dumpster to prohibit potential harborage. Obtain by next standard inspection.

3717-1-06.4(A) / Repairing.
Repeat Physical facilities not maintained in good repair. Observed ceiling tile in the mop area to be missing. PIC stated she had been in contact with maintenance to have it replaced, but it has yet to arrive. Correct by 4/3/2023.

Facility not maintained clean. Observed floor under the drive thru station soda dispenser to have visible residue. Clean by 4/3/2023.
