Non-durable equipment observed. Observed bottom plate for the thermometer of the front produce cooler is be missing. PIC states that it was accidentally thrown away and there is an order in for it. Correct by next standard inspection.

Repeat Non-food contact surfaces of equipment are unclean. Observed residue in the island drawers. Correct by 11/17/2022.

Repeat Facility not maintained clean. Observed black residue at the sink/wall junction of the wall behind the 3 compartment sink. PIC stated the sealant is currently on order. Correct by next standard inspection.

3717-1-04.2(D) / Ventilation hood systems - adequacy.
Repeat Ventilation hood system not sufficient to prevent grease or condensation build-up. Observed dust build-up in the vent nearest the clean dish area. Clean by 11/17/2022.

3717-1-06.2(I)(1) / Lighting - intensity (10 FC)
Light intensity less than ten foot candles in required areas. Observed 1 Candle Foot Power in the freezer. The light intensity of the freezer should be at least 10 CFP. Correct by next standard inspection.

3717-1-06.2(I)(3) / Lighting - intensity (50 FC)
Light intensity less than fifty foot candles in required areas. Observed 44 Candle Foot Power on the serving line, 21 CFP at the ovens Candle Foot Power in the freezer. The light intensity of the food preparation areas should be at least 50 CFP. Correct by next standard inspection.

Repeat FSO license not displayed; improper display of mobile FSO information. Observed no food license accessible/or posted at time of inspection, due to being locked in the office. Have all required documentation mentioned in the comments readily accessible by next standard inspection.

Employees are not informed in a verifiable manner of their responsibility to report information about their health. Observed no employee illness forms accessible at time of inspection, due to being locked in the office. Have all required documentation mentioned in the comments readily accessible by follow up inspection 11-16-22.
3717-1-03.2(Y)/Miscellaneous sources of contamination.
Food not protected from contamination. Observed personal food items stored on top of the dough racks of the walk-in cooler. Move to bottom rack or in container by 11/10/2022.
3717-1-04.1(KK)/Food equipment - certification and classification.
Equipment not approved by a recognized testing agency. Observed new Kerig machine in the front line. No commercial grade marking were observed. PIC unable to provide information/specification sheets at time of inspection. Provide information about the machine to Richland Public Health Department by 11/16/2022 or discontinue use of unit.
3717-1-04.4(B)/Cutting surfaces.
Cutting blocks or boards cannot be effectively cleaned and sanitized. Observed tomato slicer cutting board to be overly scored and stained rendering the surface no longer smooth, durable, and easily cleanable. Resurface or replace by 11/16/2022.

Non-food contact surface(s) not cleaned at the required frequency. Observed dust build-up in the produce cooler ventilation on the front line. Correct by 11/16/2022.
Comments
Conducted and reviewed inspection with Kayla (PIC), and Jade Sweitzer (EHSIT). Discussed having all required documentation readily accessible to the inspector when requested. Having documentation, but locked in an office, or off site is not acceptable. Have required documentation (Valid food operation license, employee illness, fecal/vomit clean-up instructions, and choking poster) readily accessible for the next standard inspection. Additionally make sure that the choking poster is in an area of the facility where it is readily accessible to the public and to the staff. New Kerig coffee machine is NSF approved.
