3717-1-03.4(H)(1) / Ready-to-eat, time/temperature controlled for safety food - disposition.
Critical Corrected During Inspection Ready-to-eat, TCS food not properly discarded when required. Observed a package of turkey in the deli case with an open date of 12-5. Observed a package of lunch meat in the deli case with an open date of 12-12. Ready to eat, TCS food shall be held for a maximum of seven days. The day of preparation shall be counted as day one. PIC voluntarily discarded turkey and lunch meat at the time of inspection.

3717-1-03.4(G) / Ready-to-eat, time/temperature controlled for safety food - date marking.
Critical Corrected During Inspection Refrigerated, ready-to-eat, TCS foods not properly date marked. Observed chicken in the deli case that had been opened without a date mark. PIC voluntarily discarded chicken at the time of inspection.

3717-1-04.1(Y) / Temperature measuring devices.
Repeat Hot and cold holding equipment thermometer was missing, located incorrectly, or not easily readable. No thermometer available in the mini cooler. Correct by next inspection.

3717-1-03.5(C)(2) / Food labels - packaged food
Label on a food packaged in-house did not contain all required information. Observed the common name of the food, the name and place of business, and the ingredients list on the chili and mincemeat in the retail freezer. Label information shall include the common name of the food, a list of ingredients, the name and place of buiness, and an accurate declaration of the quantity of contents (net weight). Correct by next inspection.

3717-1-04.1(KK) / Food equipment - certification and classification.
Repeat Equipment not approved by a recognized testing agency. Observed non-commercial pieces of equipment: Kitchen Aid mixer, Haier mini cooler, Haier chest freezer, Kenmore refrigerator/freezer, Oster microwave, a toaster, and several crockpots and roasters. When equipment no longer functions properly, replace with commercial grade.

3717-1-04.5(A)(3) / Cleanliness of nonfood-contact surfaces of equipment.
Non-food contact surfaces of equipment are unclean. Observed residue on the top fan inside of the three door retail display cooler. Correct by next inspection.

3717-1-06.4(A) / Repairing.
Repeat Physical facilities not maintained in good repair. Observed a section of exposed insulation on the ceiling in the cider room. Correct by next inspection.

Conducted and discussed inspection with Anne. Employee Health Policies on file in facility during inspection. Discussed having food employees read, sign, and date updated policies with COVID-19 symptoms. Emailed inspection report.
